Our country is filled with its regional flavours while the cuisine is known for a rich combination of rice specialities, spices, herbs, seafood,seasonal vegetables and fruits and of course, legumes.
Coconut Roti
Sri Lankan Coconut Roti is a traditional, flavorful flatbread made with coconut, flour, and a touch of spices. It is often enjoyed as a breakfast or snack, served with a variety of side dishes like sambol, curry, or even just a cup of tea. With its rich taste and soft texture, it's a beloved comfort food in Sri Lanka.
Ingredients:
- 2 cups of all-purpose flour
- 1 cup of grated coconut (fresh or desiccated)
- 1/2 teaspoon of baking powder
- 1/2 teaspoon of salt
- 1 tablespoon of sugar (optional)
- 1/2 cup of water (adjust as needed)
- 2 tablespoons of butter or margarine (optional for richness)
Recipe:
- In a large mixing bowl, combine the flour, grated coconut, baking powder, salt, and sugar.
- Mix in the butter or margarine until the mixture becomes crumbly.
- Slowly add water, a little at a time, and knead into a smooth, soft dough.
- Divide the dough into small balls and roll each into a flat circle, about 1/4 inch thick.
- Heat a flat griddle or pan over medium heat and cook the roti on both sides until golden brown and cooked through, about 3-4 minutes per side.
- Serve hot with your favorite side dish or enjoy it as is with a cup of tea.
