Roots and Tubers (Yams)
Roots and tubers (yams) are staple foods in Sri Lanka, rich in nutrients and flavor. Common varieties include kiri ala (white yam), kahala, innala, and bataala (sweet potato), used in traditional curries and steamed dishes.
Lotus Root (නෙලුම් අල)
Lotus root is an oblong, tubular rhizome or stem that grows underground in bodies of water, averaging 5-10 centimeters in diameter and 10-20 centimeters in length. Rhizomes contain high amounts of starch without characteristic taste or odor. The texture is comparable to a raw potato. Lotus root is a popular vegetable in Sri Lanka, where it is often cooked in coconut milk gravy. In India, lotus root is cooked as a dry curry or sabzi.
